Previously known as Holly’s Cuvee, this wine weaves together Chardonnay from all three heritage blocks on Spring Ridge, planted between 1981 and 1982: Bee Block, Home Block, and Amphitheater Block. 

All three blocks are picked, pressed, and aged separately. After about a year in barrel, the three block-designate wines go to their bottles, while the Holly’s comes out of barrels, is blended in tank, and returned to stainless-steel vessels for another 6 months of ageing. 

A deeply layered aromatic profile evokes richness and sophistication without sacrificing freshness, florals, and fruit. The palate is prismatic, showing different sides in different light - acid here, depth there, a trace of savory umami and salt, and fresh squeeze of juice there. A long finish that is compelling and engaging.
